Before sugar started being sold in the form of grains or cubes, it was transported and sold in large cone shaped loaves. As it was not sold ready to use, there were steps needed to turn sugar into an ingredient ready for the kitchen. An important part of this process involved sugar cutters. After breaking the loaf into slightly smaller lumps, these cutters would have been used, similar to as if they were scissors, to further cut the sugar into smaller crumbs and pieces. If needed, a pestle and mortar could then be used to make the sugar even finer.
